It’s always great to offer a deliciously healthy option that everyone can enjoy. These bites blend the freshness of cucumber with the creamy texture of avocado and the succulent taste of shrimp, creating a perfect party treat.

Cucumber Avocado Shrimp Bites

English cucumber, sliced
1 lb shrimp, peeled and deveined
1 Tbsp olive oil
½ tsp salt + pepper + garlic powder
Fresh herbs like basil dill (optional)

Avocado Mash:
2 avocados
½ tsp each salt + pepper
Juice of ½ lemon

1. In a large mixing bowl, add shrimp and combine with olive oil and seasonings.
2. Heat a frying pan on medium-high heat and add shrimp. Sear for 2-3 minutes per side and set aside.
3. Rinse and dry cucumber and slice into ½-inch thick slices.
4. add avocado, salt, pepper, and lemon juice in a separate mixing bowl. Mash until everything is combined into a dip-like consistency.
5. Top each cucumber slice with mashed avocado and a piece of seared shrimp. Repeat with remaining cucumber slices. 6. Top with fresh herbs as desired. Serve immediately.
