Strawberry Cherry Beet Popsicles!

Looking for a fun way to get more fruits AND veggies into your kids this fall (or any time of year)? These popsicles are bright, sweet, and packed with nutrients—even that sneaky little beet hides perfectly in the mix!
Why we love them:

- Easy to make in advance—perfect for after-school snacks
Ingredients:
1 cup strawberries (fresh or thawed from frozen)
1/2 cup pitted cherries (fresh or thawed from frozen)
1/2 small cooked red beet
1/2 tsp vanilla extract (optional)
2 Tbsp honey, maple syrup, or agave nectar ( optional)
1–2 Tbsp water
Instructions:
- Blend all ingredients until smooth and vibrant.
- Pour into popsicle moulds.
- Freeze for at least 5 hours (or until solid).
- Enjoy 8 colourful, nutrient-packed popsicles!
Pro Tips:
- Sweetness: Adjust honey or syrup to taste, depending on how sweet your fruit is.
- Beets: Roasted or steamed beets work ideally—just make sure they’re soft enough to blend.
- Storage: Popsicles can be stored in the freezer for up to 2 weeks.
Extra fun idea: Use cookie cutters or layered colours to make rainbow pops—kids love the surprise inside!
